It does not absorb much water, is not very soluble, and is therefore best suited for dry products, dairy desserts, bars, and extruded products.
Due to its low calorie content and high level of insoluble fibre rich in cellulose, it is highly valued in dietary products and foods designed to provide a greater feeling of fullness. Like all fibres, it also supports healthy intestinal flora.
It increases the nutritional value and fibre content of any dish while reducing fat and calories — without altering the taste. By partially replacing regular flour, it helps lower the carbohydrate content in dough.

FIELDS OF USE
Ideal for preparing sauces, dairy products, fruit juices, ice creams, baked goods, and pasta.

TECHNICAL CHARACTERISTICS

ICE CREAM
Food-grade bamboo fibre, used in small quantities, helps create a smooth, homogeneous ice cream that is stable against temperature changes.
In sorbets, it adds solids — for instance, in a lemon sorbet — to improve consistency and creaminess.
A very small dosage (we recommend less than 5g) is sufficient to absorb more liquid.
