DUKAN KONJAC RICE
Why do I call this konjac rice “second generation”?
First of all, because it is made with Indonesian konjac, a species that differs from Chinese konjac in that it does not have the natural iodine-like smell — an odour that tends to intensify during its 45-day sea voyage from China, immersed in water-filled trays.
Furthermore, Indonesian konjac grows wild and is harvested by hand in the forest. Once collected, it is ground into flour and shaped into rice with a touch of tapioca, which gives it its grain form, its texture similar to traditional rice, and prevents the rubbery feel typical of first-generation konjac rice.
After being shaped, it is dried, becoming dry rice — and that’s how we receive it in France.
This wild and artisanal Indonesian konjac is processed locally, and we share worldwide exclusivity with Japan.
Once it arrives in France, it is sent to a semi-artisanal company in Carpentras, where it is rehydrated and then cooked for two hours to release the tapioca that gave it its shape and texture.
Then, all white and beautiful, it is packaged.
This rice does not need to be cooked again — just one minute in the microwave is enough.
The portion is generous and can be shared or enjoyed solo depending on your appetite.
In this doypack format, it makes the perfect side dish for salmon, chicken, or a homemade tomato sauce.
Because it still contains a little tapioca despite the cooking process, I recommend enjoying it on Protein + Vegetable (PV) days.
From this cooked rice, we have created a Mushroom Risotto and a Lightly Spiced Saffron Paella, both ready to eat.

THE MANY SEDUCTIONS OF KONJAC
In the beginning was first-generation konjac — wild, remarkably effective, but arriving from China in water packs, translucent in colour, and with a natural (sometimes disturbing) smell.
I was the first to introduce this konjac to large-scale retail.
But when I realised that, as it was, it would remain confined to the most determined weight-loss fighters — and could never become a staple food like pasta or rice — I decided to find a way to make that possible.
I am convinced that once it does, overweight and obesity will finally meet their match.
To achieve this, I filed a patent for a specific manufacturing process:
special cooking methods, the addition of oat fibre, shaping the rice and pasta to alter their texture, colour, and odour.
This transformation took place in France.
I then handed it over to semi-artisanal French producers, to incorporate konjac pasta and rice into traditional recipes — making them accessible to the general public.
That is my ambition:
to make konjac rice and pasta serious competitors to traditional starches, which once were a blessing in times of famine,
but today, in times of abundance, have become a silent cause of excess weight.
Today, the opposite is true — abundance kills, and among the foods of abundance, pasta and rice lead the list.
