THE MANY ATTRACTIONS OF KONJAC In the beginning was first-generation konjac: wild and highly effective, but arriving from China packed in water, translucent white, with a natural and sometimes off-putting smell. I was the first to bring this konjac to mainstream supermarkets. However, once I realised that in its current state it would remain confined to die-hard weight-loss fighters and never become a daily staple like pasta or rice, I decided to take action. I am convinced that once this shift happens, weight issues will be seriously challenged. To achieve this, I filed a manufacturing patent covering a special cooking process and a unique moulding technique for the rice and pasta shapes, altering their texture, color, and smell. This transformation took place in France. I then handed over the reins to French semi-artisanal producers to incorporate this pasta and rice into classic recipes, making them accessible to the GENERAL PUBLIC. That is my ultimate ambition: to put konjac pasta and rice in direct competition with traditional pasta and rice, which were a blessing when famine was the threat.
