DUKAN KONJAC RICE

Why do I call this konjac rice “second generation”?
Firstly, because it’s made from Indonesian konjac, a variety that differs from Chinese konjac as it does not have the natural iodine smell — an odour that tends to intensify during the 45-day journey from China in water-filled packs.

Secondly, Indonesian konjac is wild, hand-harvested from the forest. Once gathered, it’s ground into flour and shaped into rice grains with a touch of tapioca to give it the appearance and texture of real rice — avoiding the rubbery feel of first-generation konjac rice. After shaping, it’s dried and shipped to France in its dry form.

This wild, artisanal Indonesian konjac is exclusively shared worldwide between France and Japan.

Once in France, it’s processed by a semi-artisanal workshop in Carpentras, where it’s rehydrated and then slow-cooked for 2 hours to release the tapioca used in shaping, achieving the perfect texture. Once cooked, it’s packaged — soft, white, and ready to enjoy!

This rice doesn’t need to be cooked again — just 1 minute in the microwave is enough.
The portion is generous and can easily serve one or two people, depending on appetite.

In its ready-to-use doypack, it’s the ideal accompaniment to a salmon fillet, chicken thigh, or homemade tomato sauce.
As it still contains a small amount of tapioca, it’s best suited for PL (Protein + Vegetable) days.

From this cooked rice, we’ve also created a Mushroom Risotto and a Saffron Paella, both ready-to-eat meals.

THE MANY SEDUCTIONS OF KONJAC

At first, there was konjac — first generation, wild and incredibly effective, but arriving from China in water packs, with its translucent appearance and sometimes unpleasant natural odour.

I was the first to bring konjac to major retailers.

But when I realised that in its natural state it would remain limited to the most dedicated dieters, and could never become a staple food like pasta or rice, I decided to improve it.
I am convinced that once that happens, obesity and excess weight will finally have met their match.

That’s why I filed a manufacturing patent — refining its cooking process, adding oat bran fibre, and reshaping the rice and pasta to change their texture, colour, and smell.

This transformation was achieved in France.

I then handed the process over to semi-artisanal French producers, who incorporated konjac pasta and rice into classic recipes accessible to the general public.

That’s my ambition — to put konjac rice and pasta in competition with regular ones. Once a blessing in times of famine, rice and pasta have now become part of the problem in our age of abundance.

INGREDIENTS:
Water, konjac pearls 22% (tapioca starch, konjac flour (18%), water, firming agent: calcium hydroxide, tapioca syrup, antioxidant: citric acid).

Packaged in a protective atmosphere.


Preparation advice:
Open the top of the pouch and heat in the microwave for 1 minute at medium power.
Then remove the konjac pearls from the pouch and enjoy them just like regular rice, in savoury or sweet recipes.

Savoury ideas: serve with sauce or vinaigrette, vegetables or raw salads, meat, fish, or plant-based proteins.
Sweet ideas: use in desserts and pastries such as rice pudding, cakes, or puddings.

RECETTES

Voici une recette de risotto de champignons, réalisé soit avec des perles de konjac, soit avec du riz complet.
80gr de riz complet ou perles de konjac Dukan
1 échalote
400ml d’eau
1 cube de bouillon dégraissé
100gr de champignon (conserve)
1cs de crème à 3%
40gr de parmesan allégé
Préparer le bouillon (eau + bouillon cube volaille à défaut de vrai bouillon maison). Le réserver au chaud.

Mettre 2 gouttes d’huile dans casserole anti-adhésive, ajouter l’échalotte finement hachée et les faire dorer environ 2 minutes. Ajouter le riz (ne le lavez surtout pas, il perdrait tout son amidon !).laisser cuire environ 2, 3 minutes. Bien mélanger.

Incorporer alors le bouillon louche après louche en laissant au riz le temps d’absorber le liquide.

Il faut compter environ 20 minutes de cuisson. Goûter au fur et à mesure après 17 minutes de cuisson pour vérifier la texture du riz (al dente ou plus cuit : cela dépend des goûts). Au terme de la cuisson, ajouter la crème cela donnera le côté crémeux. Puis les champignon, bien mélanger. C’est prêt !
