DUKAN KONJAC RICE

Why do I call this konjac rice “second generation”?
Firstly, because it’s made from Indonesian konjac, a species that differs from the Chinese variety in that it has no natural iodine odour – an odour that tends to intensify during the 45-day journey from China in water-filled packs.

Moreover, Indonesian konjac is wild, harvested by hand in the forest. Once collected, it’s ground into flour and shaped into rice grains with a touch of tapioca to give it the authentic look and consistency of traditional rice – avoiding the rubbery texture of first-generation konjac rice. Once formed, it’s dried and shipped to France in its dry form.

This wild and artisanal Indonesian konjac is exclusively shared worldwide between France and Japan.

Upon arrival in France, it’s sent to a semi-artisanal workshop in Carpentras, where it’s rehydrated and cooked for two hours. This process releases the tapioca that helped it hold its shape, resulting in soft, fluffy rice that’s then packed into doypacks.

This rice requires no additional cooking — simply 1 minute in the microwave is enough. The portion is generous and can easily serve one or two, depending on appetite.

In its ready-to-use doypack, it’s the perfect side for a salmon fillet, chicken leg, or homemade tomato sauce.
As it still contains a little tapioca, it’s recommended for PL (Protein + Vegetables) days.

From this base, we’ve also created a Mushroom Risotto and a Saffron Paella, both fully prepared and ready to enjoy.

THE MANY SEDUCTIONS OF KONJAC

In the beginning was konjac — the first generation, wild and remarkably effective, but arriving from China immersed in water, with its translucent whiteness and a natural, sometimes unpleasant, odour.

I was the first to introduce konjac into major retail stores.

But when I realised that, in its raw form, it would remain confined to the most determined weight-loss warriors and never become a staple food like pasta or rice, I decided to reinvent it.
I was convinced that if we succeeded, obesity and excess weight would finally have a worthy opponent.

To achieve this, I filed a manufacturing patent — with a special cooking process, the addition of oat bran fibre, and moulding techniques to improve the texture, colour, and aroma of konjac pasta and rice.

This transformation took place in France.

Then, I handed over to semi-artisanal French food producers to incorporate these konjac-based ingredients into classic recipes accessible to the general public.
That’s my mission: to put konjac in competition with regular pasta and rice, which were once a blessing when famine was the problem — but in our time of abundance, they have become part of the issue.

Pre-Cooked Pearls Made from Konjac Flour

INGREDIENTS:
Water, konjac pearls 22% (tapioca starch, konjac flour (18%), water, firming agent: calcium hydroxide, tapioca syrup, antioxidant: citric acid).

Régime Dukan, 128 Rue de la Boétie, 75008 Paris, France.

Packaged in a protective atmosphere.


Preparation advice:
Open the top of the pouch and heat in the microwave for 1 minute at medium power.
Then remove the konjac pearls from the pouch and enjoy them just like classic rice — in savoury or sweet recipes.

Savoury ideas: serve with sauce or vinaigrette, vegetables or raw salads, meat, fish, or plant-based proteins.
Sweet ideas: use in desserts and pastries such as rice pudding, cakes, or puddings.


STORAGE INSTRUCTIONS:
Store unopened at room temperature.
After opening: keep refrigerated and consume within 48 hours.

RECIPES

Mushroom Risotto Recipe

Made with either Dukan Konjac Pearls or wholegrain rice.

Ingredients:

  • 80g wholegrain rice or Dukan konjac pearls

  • 1 shallot

  • 400ml water

  • 1 low-fat stock cube

  • 100g mushrooms (tinned or fresh)

  • 1 tbsp 3% fat cream

  • 40g reduced-fat Parmesan

Preparation:

  1. Prepare the stock by dissolving the stock cube in hot water (or use homemade chicken stock if preferred). Keep warm.

  2. Heat 2 drops of oil in a non-stick saucepan. Add the finely chopped shallot and sauté for about 2 minutes until lightly golden.

  3. Add the rice (do not rinse it, as this removes the starch essential for a creamy texture). Cook for 2–3 minutes, stirring constantly.

  4. Gradually incorporate the stock, one ladle at a time, allowing the rice to absorb the liquid before adding more.

  5. Cook for around 20 minutes, checking after 17 minutes to test the texture (whether you prefer it al dente or softer).

  6. Once cooked, stir in the cream for extra smoothness, then add the mushrooms. Mix well.

Your creamy, healthy risotto is ready to serve! 🍄
