THE THOUSAND CHARMS OF KONJAC
In the beginning, there was konjac — the first generation: wild, remarkably effective, but arriving from China in its water-packed pouch, with its translucent whiteness and a natural yet sometimes unpleasant smell.
I was the first to bring this konjac to mainstream distribution.
But when I realised that, in its raw form, it would remain limited to those fiercely fighting excess weight — and could never become a staple food like pasta or rice — I decided to give it that opportunity.
I’m convinced that when that happens, overweight and obesity will finally meet their match.
To achieve this, I filed a manufacturing patent — covering a specific cooking process, the addition of oat fibre, and the moulding of rice and pasta shapes to transform their texture, colour, and smell.
This transformation took place in France.
I then passed the baton to semi-artisanal French food companies, whose chefs incorporated konjac pasta and rice into classic recipes to make them accessible to the general public.
That’s my ambition: to put konjac pasta and rice in direct competition with traditional pasta and rice — foods that were once a blessing when famine was killing.
Today, it’s the opposite — abundance is killing, and among the culprits, pasta and rice are at the top of the list.
